Spiced Salmon with Cheesy Broccoli
If I’m being honest, this is one of the simplest, quickest, delicious healthy recipes you can make without feeling like a gluttonous monster afterwards. I never like to substitute health for flavor, so even if it may be good for me, I refuse to eat unseasoned steamed rice and broccoli as a meal. If you can do that, power to you, but I need something that doesn’t make my taste buds want to fall out of my mouth.
Since I’ve been experimenting with my air fryer, I made this recipe entirely in there. You could definitely also make this in the oven and it’d come out great. What’s great about cooking is you don’t need fancy tools or a whole lot of skill to make a nice meal. Let’s get into it!
Servings: 2
Ingredients:
2 salmon filets, 3-5 oz (I love the Atlantic salmon from Whole Foods)
1/2 lemon, thinly sliced
1 large head of broccoli, cut into florets
1/4 cup shredded cheese of choice (I used cheddar)
2 tbsp avocado oil or olive oil
Tony Chacheres Creole Seasoning, to taste
Recipe:
1. Season salmon filets with creole seasoning and brush with avocado oil. The creole seasoning already has salt in it, so I don’t add any more salt.
2. Place on rack in air fryer and top with sliced lemon.
3. Cook at 375 for 10-12 minutes depending on desired level of doneness. Halfway through cooking, add broccoli florets in – the natural oil from the fish is enough to cook it through.
4. Add shredded cheese to broccoli 2 mins before end of cooking time.
5. Serve and enjoy!
