No Frills Grilled Cheese

Grilled cheese is the ultimate comfort food on a gloomy, cold day. Or a warm day. Or any day at all. The crispy bread with the soft, warm cheese compliment each other so nicely. I love a simple sandwich like this, but if you’re feeling wild, you can always throw in some tomatoes, jalapenos, or a meat like bacon or prosciutto. If it’s up to me though, I’d rather just throw in some extra cheese into the mix (which I did, for the record).


Servings: 1

Ingredients:
2 slices bread of choice (great with a low carb sourdough, ciabatta, or rye)
2 slices cheese of choice (Muenster, Havarti, Cheddar, American)
1 tbsp mayonnaise (I prefer Hellmann’s or Sir Kensington’s)
1 tbsp shredded cheese of choice

Recipe:
1. Use 2 slices of bread of choice. I used a low carb sourdough, but I also love a good ciabatta or rye.
2. Heat nonstick skillet on medium heat.
3. Lay down 2 slices of cheese onto bread slice. Halve slices and layer them on the bread so the cheese covers the entire surface of the bread.
4. Form the sandwich.
5. Spread good mayo on the outsides of both slices (aka the sides you plan to put directly on the pan). I learned this trick from @thetipsyhousewife for the PERFECT crispiness.
6. Place on hot pan and cook for ~4-5 mins. Add some shredded Colby Jack into the middle, then flip over and cook for another 4-5 mins. Keep an eye on it – if it’s cooking faster, take off the heat. You want a nice char, not a carcinogenic piece of cardboard.
7. Serve with a side of dill pickles and enjoy!
